Before starting the cleaning process, you need to dispose of the oil. Remove the drain pan and wheel in your oil disposal shuttle or whatever you use to discard your oil.

  1. Accessing the Control Panel

The Henny Penny Evolution Elite open fryer features an intuitive control panel that allows you to access various cleaning options easily. To start the cleaning process, access the control panel and hold one of the two F filter buttons for three seconds.

  1. Selecting the Clean-Out Option

Once the filter menu pops up, use the P button to scroll right until you find option number seven, clean out.

  1. Activating the Clean-Out Process

Click the check button to activate the clean-out process.

  1. Responding to the Prompt

The control panel will prompt you if the oil is removed. With your disposal shuttle in place and oil still in the vat, click no for oil removed, and then hit yes to dispose of the oil.

  1. Confirming the Disposal Shuttle is in Place

Confirm that the disposal shuttle is in place by clicking yes one more time. The oil will start draining from the vat down to the disposal shuttle so you can wheel it to wherever you discard leftover grease.

  1. Removing the Disposal Shuttle

Once all the oil is drained, click yes, and then remove the disposal shuttle.

  1. Inserting a Clean Drain Pan

Insert a clean drain pan for us to drain the water once the cleaning cycle is complete.

  1. Adding Water

Start adding water for our clean out, making sure to add enough water to cover the oil ring on the outer sides of the vat to ensure we’re getting all the carbon buildup possible.

  1. Adding Cleaning Solution

The control panel will prompt you if cleaning solution has been added. Use Henny Penny’s 12400 Prime cleaner brackets to add to the water and start removing that carbon buildup.

  1. Confirming the Cleaning

Confirm by clicking yes on the control panel and then confirm one more time to start the cleaning.

  1. Scrubbing Periodically

Make sure to scrub periodically with a Gong brush during the cleaning cycle.

  1. Draining Water

At the end of the cycle, drain water into the drain pan in small increments to discard in a nearby sink or floor drain.

  1. Rinsing Sediment

Rinse any leftover sediment by pouring a little water around the vat while the drain is still open.

  1. Drying the Vat

Take a towel and make sure the vat is as dry as possible because we know oil and water don’t mix well.

  1. Clearing the Solution from the Lines (Optional)

Confirm on the control panel that our rinse is complete, and then you have the option to clear any solution from the lines.

  1. Acknowledging the Cleaning is Done

After you’ve done that, acknowledge that the cleaning is done and then confirm once the vat is completely dry and the fryer turns off.

  1. Adding Fresh Oil

Finally, add enough oil to reach our bottom fill line, and then our process is complete.
