1. Emptying the Vat: Open the fryer door and unscrew the drain wing nut located above the drain pan. This allows you to remove the drain pan and insert your oil disposal shuttle (or ODS) or any other equipment you use for oil disposal. Turn the drain valve a quarter turn slowly, allowing the oil to drain into the disposal shuttle, thereby minimizing splashback and overflow.
2. Wipe Down: After all the oil has been drained from the vat, use a towel or a brush to wipe down any remaining oil.
3. Fill with Water: Fill the vat with water, ensuring that you cover the heating elements and the grease line on the interior outside walls of the vat.
4. Add Cleaner: Next, add packets of Henny Penny Prime Cleaner (part number 12400) to the vat. This solution is specially designed to remove all carbon buildup inside the vat.
5. Cleanout Mode: Turn the fryer on and hold the clean button or idle button for a few seconds once it hits the ‘Melt’ cycle. Click ‘1’ to acknowledge the cleanout mode. Your fryer will then heat to the correct cleanout temperature. The default is set for 20 minutes but can be adjusted to suit your operation.
6. Scrub: Use a Gong brush to wipe down the sides during the cleaning cycle. Once the cleaning is done, the control panel will alert you.
7. Drain the Vat: Turn the fryer off and start releasing the water into a clean drain pan under the drain, ensuring to do this in small increments. Dispose of the water in a nearby sink or floor drain.
8. Rinse and Dry: Use a brush to clean off any remaining sediments, and pour a little water to rinse them down into the drain pan. Because oil and water don’t mix well when heated, ensure that you dry the vat as much as possible.
9. Refill with Oil: Finally, you can add fresh oil into the vat, filling it up to the designated line. Turn the fryer on, and it will prompt you to confirm if the pot is filled. Click ‘yes’, and you’re back to heating and making delicious food.
Why Regular Cleaning is Crucial
Performing cleanouts every couple of weeks, or as needed based on your cooking volume, not only leaves the vat sparkling clean but also ensures the probes and sensors are clean. This in turn allows them to relay clear readings to the control panel. Regular cleaning and maintenance of this machine can extend its life for decades, as I’ve personally witnessed in several restaurants.
