Welcome back to our ‘Now You Know’ series, where we demystify the workings of the Henny Penny Evolution Elite Fryer, one step at a time. Today’s blog post is a recap of our recent video on how to program a product into the fryer’s control panel.
The beauty of the Evolution Elite Fryer is that it can store up to a whopping 40 programs. So whether you’re using the fryer for a handful of dishes or maximizing all 40 slots for an elaborate menu, programming the control panel will ensure that every dish comes out with the same delicious quality, regardless of who’s operating the fryer.
Now, let’s dive into how you can program your first product into the control panel.
Step-by-Step Guide: Programming the Control Panel
First, press and hold the ‘Program’ or ‘P’ button, located in the top right corner, for three seconds. This action brings up the programming menu. To unlock it, enter the code ‘123’.
From here, you have the freedom to select any number on the control panel that you want to program. For this demonstration, we’re going to choose option 5. To confirm the selection, hit the ‘Program’ button once more.
Next, name your product. You can either use the two up and down arrows to select letters one by one, or use the numbers on the control panel, akin to T9 mobile phone texting, to quickly spell out your product name. Once you’re happy with the name, hit the ‘P’ button to confirm it.
Following this, the program will automatically assign your product to button 5. If you wish to change the assigned button, hold down a new number to lock it in place, and then press ‘P’.
The next step is to set the cooking time. Use the up and down arrows or the numbers on the control panel to set the duration for which you want the product to cook.
The control panel also allows you to adjust the cooking temperature. If you wish to change it from the set point, use the up and down arrows to select the desired temperature, then lock it in place by pressing the ‘P’ button.
The ‘Cook ID’ field is where you can add an abbreviation for your product that will display on the control panel during the cooking cycle. This function is handy as it lets you quickly identify what’s cooking just by glancing at the panel.
The Evolution Elite Fryer also has two alarm options that serve as reminders for staff to pay attention to what’s going on in the fryer. You can set them up to remind staff to shake the product during a cook cycle.
Another feature is the ‘Quality Timer’, which monitors how long food sits in the basket above the fryer before you need to drop a new load.
The ‘Include in Filter Count’ feature, when used wisely, can help you maximize oil savings. You can adjust it using the up and down arrows.
The truly game-changing feature is ‘Load Compensation’. It modifies the timer based on the oil temperature and the size of the batch you’re dropping, ensuring consistency whether you’re frying a small batch or a large one.
The ‘Load Comp Reference Point’ should ideally be your set point or cooking temperature. Meanwhile, the ‘Full Heat’ setting determines when the heat kicks on after you start a timer. For our purposes, we’ll leave this at zero.
The ‘Pulse Control’ or ‘PC Factor’ setting prevents overshooting of the set point by pulsing the heat when it gets within the set range of the set point.
Once you’ve gone through these steps, your product is saved! To exit
to the main menu, simply click the ‘INP’ button.
Consistency is Key
By programming your control panel, you ensure a consistent cooking process that will yield a delicious food product unique to your menu every single time. That’s all there is to it!
